We were recently visiting Santa Barbara County we had the pleasure of sharing a bottle of Cabernet Sauvignon from the Sanger Family of Wines (Solvang) Consilience 2014. This was our first taste of Cabs from Santa Barbara County more known for Pinot Noir (Sideways 2004) and we were pleasantly surprised.
The dark fruit aromas of blackberries with hints of vanilla and mint, medium tannins and acidity with a smooth finish for a Cab from young vines. We expect to see more Cabernet Sauvignon’s from this region in the years to come. This Cabernet is a wonderful sipping wine that can be enjoyed alone or paired with Italian food or an olive and salami crudité platter. I give this wine 3 glasses.
Details: This Cabernet Sauvignon was aged 20 months in older, neutral oak barrels (70% French, 20% American, and 10% Hungarian). It is 86% Estelle Vineyard Cabernet Sauvignon, 10% Estelle Vineyard Merlot, and 4% Estelle Vineyard Tempranillo.
