It’s a chilly Saturday evening after the rain and I decided to open an Inglenook Cabernet Sauvignon 2014. It started out with a very jammy, berry bouquet of dark cherries, scent of licorice, and very earthy. The tannins were very strong with a short finish. This wine definitely needs another 3 years in the cellar to soften the tannins. It did not go well with cheese. This wine would go well with a N.Y. strip. The wine was quite different the second day. The fruit bouquet had faded and was replaced by oak and cedar. The tannins relaxed the second day and the wine continued to have a medium body. Giving this wine 3 glasses out of 5.
